Xanthan gum is a Thickener product. It is a highly viscous, water-soluble microbial exopolysaccharide derived from Xanthomonas Campeseris via fermentation using starch-containing media, purification, drying, and pulverization. The molecular structure of xanthan gum is a linear linked β-d-glucose backbone with a trisaccharide side chain on every other glucose at C-3.
The aqueous solution of xanthan gum is generally milky white translucent. But the high transparent xanthan gum can present a state similar to that of clear water, with high transparency.
