Medium chain triglycerides, also known as medium chain fats, are naturally present in foods such as palm kernel oil, coconut oil, and breast milk. They are one of the sources of dietary fat and the main components are "caprylic and capric glycerides". Medium chain triglycerides (MCT), also known as medium chain triglycerides in English; Fatty acids are classified into short chain, medium chain, and long chain based on their carbon chain length. Generally, fatty acids containing 6-12 carbon atoms forming a carbon chain are called medium chain fatty acids (MCFAs), which are esterified with glycerol to form medium chain triglycerides (MCTs). A typical MCT refers to saturated caprylic triglycerides, saturated decanoic triglycerides, or saturated caprylic decanoic acid mixed triglycerides. Medium chain triglycerides are only composed of saturated fatty acids, have a low freezing point, are liquid at room temperature, and have low viscosity. Compared to soybean oil, it is a completely odorless and colorless transparent liquid. Compared with ordinary oils and hydrogenated oils, the content of unsaturated fatty acids in medium chain triglycerides is extremely low, and their oxidation stability is very good. Their iodine value does not exceed 0.5. MCT is particularly stable at high and low temperatures.
